Pasta La nascita del nostro pastificio trae ispirazione dai ricordi autentici delle domeniche in famiglia, ai piedi delle Langhe piemontesi. Il nonno raccoglieva le uova fresche dal tuorlo intenso, mentre la nonna preparava le tagliatelle all’uovo con la sua macchina Imperia. Attorno alla tavola, tra profumo di ragù, buon vino e risate, prendeva forma una tradizione fatta di amore e condivisione. È proprio da queste emozioni sincere che nasce il desiderio di far rivivere oggi il sapore genuino della pasta della nonna. UNA TRADIZIONE CHE CONTINUA: PASTA LUNGA E PASTA CORTA Ancora oggi utilizziamo macchinari storici, ricette tramandate nel tempo e ingredienti premium come semola e uova esclusivamente italiane , per creare una sfoglia all’uovo lavorata con cura, piegata, tagliata ed essiccata lentamente a basse temperature per circa 24 ore . Questo processo delicato permette di preservare il gusto, i profumi e la qualità di ogni ingrediente. Arricchita con ingredienti selezionati come tartufo , funghi porcini , pesto emolte altre specialità, la nostra pasta lunga all’uovo esprime appieno tutta la ricchezza della tradizione italiana. It is from these sincere emotions that our desire was born: to revive today the genuine flavor of grandmother’s homemade pasta. A TRADITION THAT CONTINUES: LONG AND SHORT PASTA Even today, we use historic machinery, time-honored recipes, and premium ingredients such as exclusively Italian semolina and eggs to create carefully crafted egg pasta sheets that are folded, cut, and slowly dried at l ow temperatures for approximately 24 hours . This delicate process preserves the taste, aromas, and quality of every ingredient. Enriched with selected ingredients suchas truffle , porcinimushrooms , pesto , and many other specialties, our long egg pasta fully expresses the richness of Italian tradition.
